Smoking as a way of preserving fish has been around for eons, and today there are many devices to enhance and simplify this age-old process.
Combine an inventive mind with an engineering background, also adding in a love of the outdoors and cooking the catch, and you have a recipe for some great products – UFO (Universal Food Oven).
Along with several other clever things, Wayne Dil Managing Director of Universal Food Oven (UFO) has created a smoke generator – the UFO Cold Smoke Creator – which can be fitted to anything that will contain smoke – even an item as simple as a sturdy cardboard box.
Essentially, the Cold Smoke Creator is a modern-day ‘mini’ version of a conventional smoker with a separate smoke box.
There are five elements to the Cold Smoke Generator: a section of stainless steel tube; a variable air pump (240v); a silicon hose; wood chips; and a source of heat to get the chips smouldering.
We set the Cold Smoke Creator up in conjunction with a conventional UFO ‘15-minute’ hot smoker by drilling a hole (using the 25mm hole saw provided in the kit) in the side of the smoke box, enabling the Cold Smoke Generator to be attached.
Next, the variable-speed air pump was rigged via the silicon hose, the tube filled with chips, the heat applied to the ignition hole, and within 15 seconds smoke filled the smoker box.
From the time we drilled the hole in the smoke box until being fully operational was less than five minutes (it took us longer to decide where we were going to attach the Cold Smoke Creator and measure it, than get it all up and running!).
The first test run was smoking some cheese – a round of brie and a 300g block of Edam, which we cut in half.
The degree of smoked flavour you want depends on how long you leave the Cold Smoke Generator on for and / or what setting the air pump is on.
The smaller the amount of air available, the longer the chips last, but the less smoke it generates.
An hour’s smoking resulted in some beautifully smoke-tinged and glazed cheeses, which were immediately consumed on crackers – the family’s verdict: great!
It is appropriate that the product name contains the word ‘universal’, as this is appropriate when discussing the Cold Smoke Generator.
